Diced beef fat
100% pasture raised beef fat has high levels of omega-3 fatty acids because of the diverse diet the animals have eaten.
This diced fat can be rendered to make tallow by cooking on the lowest heat with a little water to prevent burning. When cooked strain and allow to set, this cooking fat has a long shelf life and is incredibly versatile
Rendered fat makes the best roast potatoes due to its high smoke point but can also be used for shallow frying.

All of our beef is 100% regenerative without exception. Most of our producers are PFLA certified and many of them are using Holistic Planned Grazing techniques to put more carbon into the ground than the farms release meaning a net loss for the atmosphere.
The farmers we select from keep rare breeds that are best suited to the land they are farming. These breeds are chosen for their hardiness meaning they can thrive on pasture and be outside in all but the very worst of weather.
All of our beef is slower grown to achieve a deeper richer flavour that is linked to the land and the variety of herbs, grasses and wildflowers that the animals eat. We recommend trying the same cuts from different farms to see the difference that breed and diet can make. This really is the craft meat revolution.

Steak Strips
Cutting a lot of steak produces a lot of offcuts. These versatile strips are the perfect way to utilise them and creates a delicious, convenient alternative product from favourite steaks, ribeye, sirloin and rump. They are tender, easy to use and quick to cook with a robust rich flavour attributable to the way in which we dry-age our steak. Use in tacos, an Asian stir fry with a spicy satay sauce or in a classic Stroganoff.Picture shows 500g.

Beef Silverside Roast
Silverside is one of the classic cuts of roast beef. Silverside and Topside of beef are both taken from the hind quarter of the animal, between the rump and the leg.. Silverside can be cooked as a roast and left pink in the middle or even be pot roasted and slow-cooked to melt in the mouth tenderness.
Cut leftovers as thin as possible and make into roast beef sandwiches, we recommend a smear of horseradish and maybe some leaves and pickles.

Beef Feather Blade
Feather blade cut from the shoulder that has connective tissue running through the middle, meaning it is suitable for slow cooking and not flash frying.
Cook low and slow for at least 3 hours to render the connective tissue into a rich gelatinous sauce, incredible flavour and great value.

Lamb Shoulder Chop
Lamb shoulder chops can also be called arm or blade chops. They are versatile in that they can be cooked quickly or slowly, both with delicious results. They are quite economical – usually significantly less expensive than rib chops, but from a nearby cut.

The Ethical WAGYU Burger
We are delighted to launch a new Wagyu burger concept.
We have blended our regeneratively farmed native breed beef with something quite unique: English, "olive fed", F1 Wagyu beef.
F1 Wagyu is Fullblood Wagyu that has been crossed with another breed to increase sustainability. In this case the breed is ex-dairy Holsteins that are considered a "by-product" of dairy farming.
The animals spend their entire life on a farm in Yorkshire where they are grass fed and supplemented with locally grown cereals - the vast majority of which are grown on farm. The unique part of the animals' diet is an olive pomace added for 4 months, which is believed to significantly reduce methane emissions from cattle. The pomace is itself a byproduct of olive oil production and thus contributes to the reduction of food waste, closing a loop within the food system!
